Ingredients for 4 people
2 packs of Primosale Osella
150 g of date tomatoes
8 slices of grilled aubergine
some basil leaves
1 small fresh cucumber
40 g of extra virgin olive oil
salt and pepper
Method
Cut the tomatoes in half, divide the cheese into cubes and finely slice the cucumber, sprinkling it with salt and soaking it in water for 5 minutes so that it becomes easier to digest.
Mix the tomatoes, cheese and cucumber together, dress with a drizzle of oil, salt, pepper and finely chopped basil.
Place a small amount of the cheese and vegetables on each slice of aubergine, roll up and arrange the stuffed rolls on individual plates, with a drizzle of olive oil, salt and pepper.
Enjoy this dish chilled.
