Ingredients for 4 people
2 Linea Osella Cheeses
4 very fresh courgettes
2 carrots
Cherry tomatoes as required
Mint and chives
Oil, salt
Method
Wash all the vegetables and peel the carrots. Cut the courgettes and carrots into very fine ribbons. Cut the tomatoes into quarters.
Cut the Linea Osella into wedges. Make the rolls by wrapping the courgette ribbons around the wedges of Linea Osella.
Arrange the courgette and Linea Osella rolls on the plate and decorate with the tomatoes, carrots, mint and finely chopped chives. Dress with a drizzle of oil and salt.
