Peel the grapefruit and then peel the segments. Finely slice the courgette; peel and cube the avocado. Cut the endive into fine strips. Place the courgette, avocado and grapefruit flesh in a bowl; dress with oil, salt, pepper and ground ginger. Place the endive and rocket on the plates, lay the Linea cheese on top and complete with the black olives and prepared vegetables. Sprinkle with the chopped pistachio.
