Ingredients for 4 people
2 Linea Osella Cheeses
2 black or orange carrots
2 bulbs of fennel
1 green apple
100 g of mixed salad leaves
80 g of yoghurt
A bunch of coriander
1 spoon of mustard
1 spoon of extra virgin olive oil
salt and pepper
Method
Finely slice the fennel and cover with cold water; peel the carrots and slice them into ribbons. Slice the apple and cover with water and lemon juice. Prepare the sauce by adding the mustard, oil and chopped coriander to the yoghurt, seasoning with salt and pepper. Cut the Linea Osella cheeses into quarters. Place the salad leaves and the vegetables on the plate, alternating them with the cheese and sliced apple. Spoon over the sauce.
