Ingredients for 4 people
2 Robiola Osella with Black Olives
1 long aubergine
1 piece of lemon zest
1/2 a fresh chilli
1 bunch of parsley
1 sprig of basil
extra virgin olive oil
salt
Method
Rinse the aubergine, top and tail it and cut into fine slices lengthways. Cut each slice into two lengthways strips.
Heat a grill and cook the strips of aubergine for one minute on each side.
Roll up.
