Ingredients for 4 people
2 Linea Osella cheeses
200 g of boiled chickpeas
100 g of salad spinach
100 g of dried tomatoes preserved in oil
A sprig of parsley
extra virgin olive oil and a drop of vinegar
a few raisins softened in water
salt and pepper
Cut the cheeses into cubes, dress them with the chopped parsley, raisins, a pinch of pepper and the oil.
In a separate bowl, mix the spinach with the chickpeas and dress with the vinegar, a pinch of salt and a drizzle of oil; then complete with the dried tomatoes.
Place both mixtures on the same plate, side by side, and enjoy their unusual flavour.
