Ingredients for 4 people
2 packs of Primosale Osella
200 g of pearl barley
150 g of cherry tomatoes
½ small red onion
a sprig of mixed herbs
40g of extra virgin olive oil
salt and pepper
Method
Bring enough salted water to the boil to cook the barley. Add the barley to the boiling water, cook, drain and run it under the cold water tap to cool.
Meanwhile, finely slice the onion, cut the tomatoes in half, finely chop the herbs and mix everything together, seasoning with salt and pepper and adding the cubed cheese.
Add the mixture to the barley, mix thoroughly and pour into four quite wide glasses.
