Scottarelle Osella con salsa ai carciofi


Slice the Sottarelle Osella in half horizontally. Boil the artichokes, add garlic, salt and pepper, and chop together.

Toss the Scottarelle Osella in the pan, spoon the artichoke sauce on each slice and sandwich the cheese halves two by two. Coat in flour, followed by the egg and then the breadcrumbs. Grease a baking dish with butter, place the breaded cheeses in it and bake in the oven for eight minutes.

This recipe is also excellent fried. In this case, repeat the three coatings a second time before frying in a deep pan of boiling oil.
